Cucumber Yoghurt Raita 

Makes about 2 cups

1 x 365mL tub Origin Earth Pot Set Yoghurt
1 medium cucumber, peeled and diced
2 green onions, thinly sliced
2 tsp snipped fresh mint
½ tsp ground cumin
salt and freshly ground black pepper

 1              Place yogurt in a bowl and whisk until combined and creamy.

 2              Add cucumber, green onions, mint and cumin in bowl and mix to combine. Season with a good grind of salt and black pepper.

Serving Suggestions: Use as dip with fresh vegetables, flatbread or croutons; great side for any curry; or use as a dressing for coleslaw or other vegetable salads.
