Feta, Zucchini & Chilli Mash

You could use grated Origin Earth Takenga Gold instead of feta.

Serves 4

1 tbsp olive oil
4 medium zucchini, sliced
1 onion, diced
1 fresh green chilli, minced
100g drained Origin Earth Feta in Brine, crumbled
2 tbsp finely chopped flat-leaf parsley

1              Heat oil in a frying pan over medium heat. Add zucchini, onion and chilli and toss to coat. Reduce heat, cover and cook, stirring occasionally, for 20-25 minutes or until zucchini is very soft.

2              Transfer zucchini mixture to a bowl and mash roughly. Stir in feta and parsley. Season to taste with freshly ground black pepper.
