pecorino

Pecorino (pronounced pekoˌriːno) is the Italian name for ewes’ milk cheese - the Italian word pecora, from which the name derives, means sheep.

Our Pecorino is matured for 3 years during which time it ages to a deep orange colour, develops concentrated flavours and small lumps of calcium and amino acids, known as cheese nuggets, which add an extra dimension to the texture and taste.

Try Pecorino with the following foods: shaved over pasta dishes with robust tomato sauces and carbonara; shaved over just cooked pizza; on a cheese platter.

Try Pecorino with the following beverages: full-bodied red wines such as Tempranillo; fortified wines; dry sherry.
